A Gude knife should be a sharp knife. Sharpening stones are used to remove material from your blade to rework the edge, whereas a honing steel of for maintenance of the existing edge.
In order to ensure the best cut every time and minimize wear, the blade should be honed before each use. Use a honing steel that is sufficiently long to allow the entire length of the blade to pass across its surface (>26cm is recommended). Further, an oval shaped steel is superior as it allows for a wider contact surface area and therefore ensures a higher sharpness.
For proper honing, place the honing steel in the left hand and the knife in the right hand. Run the blade along the steel towards yourself circa ten times on each side. It is important to maintain an angle of 15-20 degrees between the steel and blade to ensure proper sharpening.
